HOW TO MAKE A VEG PULAO

Ingredients for veg pulao
·
1 ½ cup basmati rice (soaked for at least 10 mins)
·
1 potato cubed
·
1 carrot chopped
·
¼ cup chopped beans
·
¼ cup green peas
·
2 medium onion sliced
·
2 tomato
·
1 chilly
· Handful mint leaves
·
Handful Coriander & mint leaves
·
1 tbsp chilli powder
1 ½ ginger garlic paste
·
1 tbsp lemon juice (optional)
·
1 ½ to 2 tsp Biryani Masala Powder (adjust to suit your taste)
·
2 ½ cups thin coconut milk
·
5 tbsp. Oil (or ghee)
·
15 Small size Mean maker (soya ball)
·
fried capsicum or fried cashews for garnish (optional)
Dry spices
· 1 bay leaf
· 4 green cardamoms
· 1 star anise
· 2 inch cinnamon
· 6 cloves
· ½ tsp cumin
How to make the recipe
Preparation for vegetable pulao
1. Soak rice for at least
10 minutes. Drain the water and set aside.
2. Chop all the veggies and
mint. Keep these aside as well.
How to make veg pulao
1. Add oil to a pressure
cooker and heat it.
2. Add spices and fry till
you get a nice aroma for one to 2 minutes.
3. Fry onions and green
chilies until golden.
4. Add ginger garlic paste
and saute until the raw smell has gone off.
5. Add all chopped
vegetables and fry for about 2 minutes.
6. Add mint leaves, biryani
masala, chilli powder and saute again for 2 more minutes.
7. Add rice and saute for 5
mins.
8. Measure and pour coconut
milk. Add salt and lemon juice.
9. Stir well and taste the
water. If needed add more salt.
10. Close the lid and let
the cooker whistle once on a low flame. Turn off the stove.
11. When the pressure goes
down, open the lid and fluff up.
12.Add cashew nuts & Serve veg pulao.
